Love Thursday: Hearting Chicken

Faithful reader and new blogger Ann of Only in Maine recently sent me the following email entitled “I heart Bleeding Espresso”:

I could not resist sending you these two shots because they so made me think of your Love Thursdays – and really, what says love better than raw meat? Or actually in this case chicken?  Some people send you cappuccino, I send chicken……

    Well, I made Chicken with 40 Cloves of Garlic last week and that was purty darn good. Upcoming blog post to follow next week…

    I love any chicken dish- really. As long as the seasoning is good- cause otherwise chicken is bland.

    Nice chicken pics! I was gonna say nice breasts- but didn’t want to get you in trouble for having *inappropriate content* 🙂

    For me, nothing beats those pollo allo spiedo that we buy from our local macellaio (when we’re in Italy, of course) Simply cannot reproduce those here. Added to their deliciousness is that someone else does the cooking. A winning combination, secondo me.

    Oh they are fabulous, aren’t they? You *really* can’t beat them for taste, price, or convenience. I just may have to get one tomorrow….

    I’m so honored, I don’t know what to say!!!! I’ll have to post that recipe today as a tie in (great, now how did I make that?) and I’ll have to call it “Chicken Bleeding Espresso” which will certainly raise some eyebrows. But I swear there is no espresso in this recipe (as far as I can remember, anyway)!!

    As for my favorite chicken recipes, here are my two TOP favorites – the first one I make all the time!:

    ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

    Chicken with Sun Dried Tomato Cream Sauce

    You may use either dry- or oil-packed sun-dried tomatoes in this sauce.
    If using dry, add a tablespoon more broth and cook a little longer to allow the tomatoes to soften.

    4 boneless, skinless chicken breast halves (about 6 ounces each)
    ½ teaspoon salt
    ½ teaspoon chili powder
    ¼ teaspoon ground pepper
    2 teaspoons olive oil
    2 teaspoons butter
    ¼ cup chicken broth or water
    2 tablespoons oil-packed dried tomatoes (about 6), cut into thin strips
    ½ cup heavy cream

    1. Season chicken with salt, chili powder and pepper. In large skillet over medium-high heat butter in oil. Cook chicken 8 minutes, turning once, until cooked through. Remove to serving plate and keep warm.
    2. Pour broth and tomatoes into pan and cook, stirring until liquid is reduced by half. Add cream, cook 4 minutes more until slightly thickened. Pour over chicken and serve immediately.

    Roasted Chicken Salad

    7 1/2 pounds boneless, skinless chicken breasts
    Salt and pepper
    2 pinches cayenne pepper
    1 tablespoon lavender
    1 lemon, juiced
    3 cloves garlic, minced
    2/3 cup sliced roasted almonds
    1 large onion, chopped
    1/2 bunch celery, chopped

    Dressing (recipe follows)
    2 tablespoons chopped parsley leaves
    2 tablespoons chives
    2 tablespoons chopped tarragon leaves

    1. Preheat the oven to 400 degrees F.
    2. Clean the chicken thoroughly. Sprinkle salt, pepper, cayenne, lavender, lemon, and garlic on chicken. Bake in preheated oven until golden brown, about 20
    minutes.
    3. Let chicken cool, and then pull it into small strips.
    4. Add roasted almonds, onions, celery, dressing and herbs.
    5. Mix together all ingredients in dressing, add to chicken and mix. Can be served by itself or on a sandwich.

    Dressing:
    1 cup mayonnaise
    3/4 cup sour cream
    1/4 cup extra-virgin olive oil
    2 tablespoons honey
    Salt and pepper
    Mix all ingredients together.
