Oh man, I love spinach pasta. I think my favorite is spinach gnocchi. Gnocchi was invented by the gods, I truly believe that.

When I first moved to Italy I used to make a vegetable lasagna…stuffed with slices of zucchina and mushrooms, it was really delicious, but my husband and his family were truly horrified by my “weird experiment” and so I quickly learned the “right” way to make lasagna…their way, that is! Which is also delicious, of course, but…
