I LOVE POMEGRANATES! I just cut the little beauty open on a plate (so as not to lose any juice, which I lick up later) and ravage those little red jewels like there’s no tomorrow…I can eat a whole one myself in about ten minutes, and have been doing so for a long time… even way before I knew how good the sweet beautiful red juice is for you…of course you can eat the seeds! (unless you’re allergic!) What else WOULD you eat??? I was actually looking for a nice Xmas fruit salad, on which I could sprinkle the lovely little pom poms as I call them, for their festive color—I think I’ll make up and ambrosia of sorts, being sure to include kiwi garnish for the required green…I won’t be entering the contest…just wanted to put my two cents in…by the way, anything from red to purple in the food groups has the most anti-oxidents and/or life-enhancing nutrition—it’s inherent in the chemical make-up of the color! (or light waves or something!) Think red cabbage, red apples and potatoes (skins on!), raspberries, blueberries, etc. etc. Happy Holidays, Good Health, and Peace and Poms!!!

The recipe is destined for my next book, about my years in Greece, if my illustrations get up to scratch. I’m dithering with the design and it’s taking my focus away from the writing.
