1st of the month featured blogger plus a pesto sandwich

Yes, today is What’s Cooking Wednesday, but it’s also the first of the month, which means it’s time for a featured blogger, and who better to feature than Shannon of Tales from the Fairy Blogmother, creator and host of What’s Cooking Wednesday?

Shan’s was one of the first blogs I ever read, months before I had one of my own, and since then, I’ve always looked forward to finding out what she and her family (includes two adorable little girls!) are up to. Shan writes about her life as a mom and wife and active fundraiser for many good causes (and so much more!) with such honesty, I can’t help but feel like we just chatted on the phone after reading her posts. And I just *love* when she shares family memories as well.

So what I’m saying is, you should visit Shan on Wednesdays for sure to check out all the lovely WCW recipes, but hang around the rest of the week too, and you’re likely to find yourself wondering what the fam’ is up to this weekend.

(I hope that doesn’t sound creepy Shan, but I really do wish I could come to your parties and family get-togethers!)

Now for those of you who expected a recipe today, I’m going to cheat a bit–I *did* post two recipes last week, you know.

That’s prosciutto cotto, mozzarella, tomatoes, and pesto on a fabulous, fresh “rosetta” roll. The pesto recipe can be found here, and this panino was a great way to use up pesto left over from the previous night’s pasta.

    Actually there’s no lettuce on there! That’s just the way the bread separated at parts with pesto on either side 🙂

    Oh yum….it brings back memories of backpacking through Europe and when in Italy…I gorged on fresh tomatoes and mozzarella with basil and olive oil….

    That sandwich looks yum Michelle… I can never get that close and have the photo turn out as clear as that. I should probably read the manual or get a new camera.:)

    If your camera has a macro setting, that’s your best bet Joe 🙂

    I don’t eat meat anymore, but at one point when I was in Calabria I was partial to a similar sandwich–tomato, fresh basil, fresh mozzarella and tuna on a roll. Mmmmm.

    Thanks, I just had that ah-ha moment, pesto! Why didn’t I think of this? A few co-workers and I have created our own lunch at the office. Rub garlic on a baguette slice, drizzle olive oil and balsamic on the slices, add a slice of prosciutto, mozzarella,a slice of Polish heirloom tomato, and a basil leaf. Pesto would add so much to this. Grazie!

    I had one of those rolls with a little butter every morning for breakfast when I lived in Rome. Unless I had pizza rossa from the joint in campo dei fiori. Damn, I love and miss those rolls.

    I like my sandwiches similar – but I put cream cheese, with italian seasoning sprayed over it, slices of hard boiled egg, tomato, and cucumber. Yum Yum! Or alternatively, slices of turkey with mustard, olives, onions, melted mozzarella, and lettuce. Sooo goood. Ok, now I am official hungary (in Hungary!). Thanks Michelle!
