		<description>Our tomatoes won't ripen until next month but I'm looking forward to making lots of caprese salads.  Hopefully our basil won't all bolt and die off by then.

What is the best olive oil to use?

Caprese salad is one of my all time favorites and I order it practically every day when in Italy.  I don't seem to find the quality of tomatoes here to be able to enjoy it.  Huge bummer.  This is definitely a dish that if it's not the freshest of fresh it's just better not to make at all.
